Traditional Vanuatu cuisine is based on locally grown and natural ingredients such as taro, yams, bananas, and coconut. Seafood is a staple, with fresh fish, lobster, and crabs often prepared in simple but delicious ways. One of the most iconic dishes is “laplap,” a baked root vegetable pudding made with coconut milk. Tropical fruits like pawpaw, pineapple, and mango are abundant, especially during the summer months. While local food dominates in rural areas, in Port Vila you can also find a mix of French, Asian, and international cuisine.
